Ingredients
  

  • cornmeal
  • vegetable broth

Instructions
 

  • In a small bowl, mix the cornmeal with enough water to form a smooth paste. Set aside.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and continue to sauté for another minute until fragrant.
  • Stir in thinly sliced cabbage, diced carrots, potatoes, and zucchini. Cook for a few minutes until the vegetables begin to soften.
  • Pour in the vegetable or chicken broth. Bring the mixture to a gentle boil. Gradually whisk in the cornmeal paste, stirring constantly to avoid lumps. Reduce the heat to low and let the soup simmer, stirring occasionally, until the cornmeal is fully cooked and the soup thickens, about 20-25 minutes.
  • Add ground cumin, paprika, salt, and black pepper. Adjust the seasoning according to your taste preferences.
  • If the soup becomes too thick, you can add more broth or water to achieve the desired consistency.
  • Ladle the hot cornmeal and cabbage soup into bowls. Garnish each serving with freshly chopped parsley. If desired, sprinkle with grated Parmesan cheese before serving. Serve hot with crusty bread for a complete and satisfying meal.
