Ingredients
  

  • large onion
  • unsalted butter
  • olive oil
  • beef broth
  • white wine
  • granulated sugar
  • salt and butter
  • shredded cheese
  • fresh thyme

Instructions
 

  • In a large, heavy-bottomed pot or Dutch oven, melt butter and olive oil over medium-low heat. Add the thinly sliced onions and cook, stirring occasionally, until they are deeply caramelized and golden brown. This process may take about 45-60 minutes. Be patient, as the depth of flavor comes from properly caramelized onions.
  • Sprinkle sugar over the caramelized onions and stir, allowing the sugar to aid in further caramelization. If using, pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let the wine cook off for a few minutes.
  • Pour in the beef broth and water. Season the soup with salt and black pepper to taste. Bring the soup to a gentle simmer and let it cook for an additional 10-15 minutes to meld the flavors together. Adjust seasoning if necessary.
  • Preheat the oven broiler. Toast the baguette slices until they are lightly golden on both sides.
  • Ladle the hot soup into oven-safe bowls. Float a slice of toasted baguette on top of each bowl of soup. Sprinkle a generous amount of shredded Gruyère cheese over the bread.
  • Place the soup bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Keep a close eye on them to prevent burning.
  • Carefully remove the soup bowls from the oven (they will be hot!) and garnish with fresh thyme leaves. Serve immediately, savoring the aroma and richness of this classic French onion soup.
