Ingredients
  

  • 1 lb (450g) goat bone
  • water
  • onion
  • carrots
  • garlic
  • celery stalks
  • ginger
  • bay leaf
  • salt and black pepper
  • parsley

Instructions
 

  • Rinse the goat bones thoroughly under cold water to remove any bone fragments or impurities.
  • In a large pot or Dutch oven, combine the goat bones and 8 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and let the bones simmer gently. Skim off any foam or impurities that rise to the surface.
  • Add quartered onion, chopped carrots, celery, minced garlic, sliced ginger, and bay leaf to the pot. Let the soup simmer, partially covered, for 2-3 hours. This slow simmering allows the flavors from the bones and vegetables to meld together.
  • Season the soup with salt and black pepper to taste. Adjust the seasoning according to your preference. Continue simmering for another 1-2 hours, allowing the soup to become rich and flavorful.
  • Carefully strain the soup through a fine-mesh sieve or cheesecloth into another pot or large bowl. Discard the bones, vegetables, and aromatics. Return the clear soup to the pot and keep it warm over low heat.
  • Ladle the hot goat bones soup into bowls. Garnish with fresh chopped parsley, if desired. Serve hot and enjoy this comforting and nutritious soup.
