Using a pressure cooker is an excellent way to cook free-range chicken, ensuring that it becomes tender, flavorful, and juicy. This recipe utilizes the efficiency of a pressure cooker to create a delicious and wholesome meal using free-range chicken, which is known for its rich taste. Ingredients
  

  • whole free-range chicken
  • olive oil
  • salt and black pepper
  • paprika
  • thyme
  • garlic
  • onion
  • lemon

Instructions
 

  • In a small bowl, mix salt, black pepper, paprika, dried thyme, and garlic powder. Rub the chicken inside and out with olive oil, then rub the spice mixture evenly over the skin.
  • Stuff the chicken cavity with lemon halves, garlic cloves, and quartered onion. This adds flavor to the chicken from the inside out.
  • Pour chicken broth or water into the bottom of the pressure cooker.
  • Place a trivet or steamer basket inside the pressure cooker. Put the seasoned chicken on top of the trivet, ensuring it's not submerged in the liquid.
  • Close the pressure cooker lid and set the valve to the sealing position. Cook on high pressure for 6-8 minutes per pound of chicken. For example, a 4-pound chicken would require about 24-32 minutes of cooking time.
  • Once the cooking time is complete, allow the pressure to release naturally for about 10-15 minutes. Afterward, carefully perform a quick pressure release if needed.
  • Use a meat thermometer to check the internal temperature of the chicken. It should read 165°F (74°C) to ensure it's fully cooked.
  • Carefully remove the chicken from the pressure cooker and let it rest for at least 15 minutes before carving. Resting allows the juices to redistribute, ensuring a moist chicken.
  • Carve the chicken into serving pieces and serve hot. Enjoy the tender and flavorful free-range chicken with your favorite side dishes.
