Equipment
- electric stove
- Roasting pan with rack
- Kitchen twine
- meat thermometer
- Basting brush
- cutting board and knife
Ingredients
- whole chicken
- olive oil
- salt and blackpepper
- paprika
- thyme and lemon
- garlic
Instructions
- Preheat your electric oven to 425°F (220°C).
- Remove giblets from the chicken cavity, if included. Pat the chicken dry with paper towels, both inside and out. If desired, stuff the chicken cavity with fresh herbs, lemon halves, and garlic cloves.
- In a small bowl, mix together salt, black pepper, paprika, and dried thyme. Rub the chicken inside and out with olive oil, then rub the spice mixture evenly over the skin.
- Place the chicken on a roasting rack inside a roasting pan. Tuck the wing tips under the chicken to prevent burning. Roast in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer in the thickest part of the thigh without touching the bone.
- Every 30 minutes, baste the chicken with pan juices using a basting brush. This helps keep the chicken moist and promotes a crispy skin.
- Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring a moist and flavorful chicken.
