- In a large bowl, toss the chicken wings or drumettes with cornstarch (or potato starch), salt, and black pepper until the chicken is well coated. Shake off any excess starch.
- Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).Working in batches, fry the chicken for about 8-10 minutes, or until they are golden and crispy. Remove the chicken from the oil and place them on a wire rack to drain excess oil.
- After all the chicken has been fried once, increase the oil temperature to 375°F (190°C).Fry the chicken again in batches for about 4-5 minutes, or until they are deep golden brown and extra crispy. Remove and drain on a wire rack
- In a saucepan, combine gochujang, soy sauce, rice vinegar, honey (or brown sugar), minced garlic, grated ginger, and sesame oil. Cook over medium heat, stirring constantly, until the sauce thickens and becomes glossy, about 3-4 minutes.
- In a large bowl, toss the double-fried chicken with the prepared sauce until the chicken is evenly coated.
