Ingredients
  

  • boneless, skinless chicken breast

Instructions
 

  • Season the chicken pieces with salt and black pepper.
    In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  • In the same skillet, add chopped onion and cook until translucent. Add minced garlic and sliced mushrooms. Cook until the mushrooms are tender.
  • Sprinkle flour over the vegetables and stir to create a roux. Cook for a minute or two to eliminate the raw flour taste.
    Gradually pour in chicken broth while stirring continuously to avoid lumps. Add heavy cream and dried thyme. Stir until the sauce thickens.
  • Return the cooked chicken pieces to the skillet. Simmer for a few minutes until the chicken is cooked through and the flavors meld together. Adjust seasoning with salt and pepper if needed.
  • Preheat your oven to 425°F (220°C).
    In a bowl, toss the potato sticks with olive oil, salt, and paprika until well coated.
  • Spread the potato sticks in a single layer on a baking sheet lined with parchment paper.
    Bake in the preheated oven for 25-30 minutes, or until the potato sticks are crispy and golden brown, flipping them halfway through the cooking time.
  • Spoon the chicken fricassee onto plates. Top each serving with a generous portion of crispy potato sticks.
  • Garnish with fresh chopped parsley.
