How to marinate chicken

Marinated chicken is poultry that has been soaked in a mixture of seasonings, herbs, spices, and often liquids like oil, vinegar, or yogurt for a period of time before cooking. The purpose of marinating is to enhance the flavor and tenderness of the chicken by allowing it to absorb the flavors of the marinade. This process not only imparts a delicious taste to the meat but also helps to keep it moist during cooking. Marinated chicken can be prepared in various ways, including grilling, roasting, baking, or pan-frying, and it is a versatile and popular choice for a wide range of dishes and cuisines.

Ingredients

  • 4 boneless, skinless chicken breasts or the equivalent amount of your preferred chicken pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice or vinegar (such as balsamic or apple cider vinegar)
  • 2 cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs (such as thyme, rosemary, oregano, or a blend)
  • Optional: Additions like soy sauce, honey, paprika, or red pepper flakes for extra flavor

Instructions

  • In a mixing bowl, combine the olive oil, lemon juice or vinegar, minced garlic, salt, pepper, and your choice of dried herbs. You can also add any optional ingredients for extra flavor at this stage.
  • Place the chicken pieces in a resealable plastic bag or a shallow dish. Make sure the chicken is evenly spread out to maximize contact with the marinade.
  • Pour the marinade over the chicken, ensuring that all pieces are well coated. Seal the bag or cover the dish with plastic wrap and refrigerate.
  • Marinate the chicken for at least 30 minutes, but longer is better for more flavor, typically 2-6 hours, or even overnight for the best results. Make sure to refrigerate during this time.
  • When you're ready to cook, you can grill, roast, bake, or pan-fry the marinated chicken, following your preferred cooking method and time based on the cut and thickness of the chicken.
  • Discard any leftover marinade that has come into contact with raw chicken to prevent cross-contamination.
Enjoy your marinated chicken with your favorite side dishes!

Notes

When making marinated chicken avoid marinating it at room temperature. Always marinate chicken in the refrigerator. Marinating at room temperature can allow harmful bacteria to multiply on the meat, which can lead to food safety issues. To ensure food safety, marinate your chicken in the refrigerator and never leave it out on the counter for extended periods. Additionally, if you're using a marinade that will be used for basting or as a sauce, set aside a portion before it comes into contact with the raw chicken to prevent cross-contamination.
