Instructions

  • In a large, heavy-bottomed pot or Dutch oven, heat some olive oil over medium-high heat. Add the chicken pieces and brown them on all sides. Remove them from the pot and set them aside.
  • In the same pot, add a bit more olive oil if needed, then add the chopped onions and garlic. Sauté until they become translucent and fragrant.
