Ingredients
  

  • boneless chicken

  • warm water

Instructions
 

  • In a blender, combine soaked cashews, blanched almonds, and a splash of water. Blend into a smooth paste. Set aside.
  • In a large, heavy-bottomed pan, heat oil or ghee over medium heat. Add the chopped onions and sauté until golden brown.
  • Stir in the minced garlic and grated ginger. Sauté for a couple of minutes until the raw aroma disappears.
  • Add the chicken pieces to the pan. Sprinkle ground turmeric, ground coriander, ground cumin, chili powder, and salt over the chicken. Mix well to coat the chicken evenly with the spices. Cook until the chicken is no longer pink on the outside, stirring occasionally.
  • Reduce the heat to low. Pour the beaten yogurt into the pan, stirring continuously to avoid curdling. Add the prepared nut paste and mix well. Let the mixture simmer gently until the chicken is cooked through and tender, about 15-20 minutes.
  • Stir in the golden raisins and heavy cream. Simmer for an additional 5-7 minutes, allowing the flavors to meld together and the sauce to thicken.
  • Sprinkle garam masala over the Chicken Korma and mix well. Taste and adjust the seasoning if needed. Garnish with fresh chopped cilantro.
