Ingredients
  

  • all-purpose flour
  • baking soda
  • ginger
  • salt
  • cinnamon
  • cloves
  • pepper
  • unsalted butter
  • brown sugar
  • egg
  • molasses
  • vanilla extract

Instructions
 

  • In a large bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, salt, and black pepper (if using). Set aside.
  • In another large bowl, using an electric mixer, cream the softened butter and dark brown sugar until light and fluffy.
  • Beat in the egg and unsulfured molasses until well combined. Mix in the pure vanilla extract.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until the dough comes together. The dough will be soft but not sticky.
  • Divide the dough into two equal portions and shape each portion into a thick disc. Wrap the discs in plastic wrap and chill in the refrigerator for at least 1 hour. Chilling the dough helps it firm up, making it easier to roll out and cut into shapes.
  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • On a lightly floured surface, roll out one portion of the chilled dough to a thickness of about 1/4 inch. Use cookie cutters to cut out your desired shapes. Transfer the shapes to the prepared baking sheets, leaving a little space between each cookie.
  • Bake the gingerbread cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Keep a close eye on them, as they can darken quickly.
  • Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Once completely cooled, decorate the gingerbread cookies with icing, candies, or other decorative elements as desired.
