Ingredients
  

  • 1 cup long-grain white rice

  • 1/2 teaspoon red chili powder (adjust for desired spiciness)

  • 1 green bell pepper, diced

Instructions
 

  • Rinse the rice under cold water until the water runs clear. Drain and set aside.
  • In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Stir in the ground cumin, ground coriander, red chili powder, and turmeric powder. Cook for a couple of minutes to toast the spices.

  • Add the diced red and green bell peppers and frozen peas to the pan. Sauté for about 3-4 minutes until the vegetables start to soften.

  • Pour in the 2 cups of water, season with salt and black pepper, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove the pan from heat, fluff the rice with a fork, and let it sit covered for a few more minutes.
  • Garnish with fresh cilantro if desired.
