Speedy Chicken and Vegetable Stew in the Instant Pot Duo is a marvel of convenience and taste. Ingredients
  

  • boneless, skinless chicken thighs
  • olive oil
  • onion
  • garlic
  • carrots
  • potatoes
  • chicken broth
  • frozen peas
  • thyme
  • salt and black pepper
  • rosemary

Instructions
 

  • Set your Instant Pot Duo to "Sauté" mode. Add the olive oil and chopped chicken. Cook until the chicken is browned on all sides. Remove the chicken and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until they become translucent and aromatic.
  • Add the sliced carrots, diced potatoes, frozen peas, diced tomatoes (with juice), dried thyme, and dried rosemary to the pot. Season with salt and black pepper.
  • Pour in the chicken broth and stir to combine all the ingredients. Close the Instant Pot lid, ensuring the valve is set to the "Sealing" position.
  • Cancel the "Sauté" mode and set the Instant Pot to "Pressure Cook" or "Manual" mode for 10 minutes at high pressure.
  • Once the cooking time is complete, allow for a natural pressure release for 5 minutes. Then, carefully switch the valve to "Venting" to release any remaining pressure.
  • Open the lid and stir the stew. Adjust the seasoning if necessary.Ladle the Speedy Chicken and Vegetable Stew into bowls, garnish with chopped fresh parsley, and serve hot.
