Our Rustic Tomato and Herb Tart is a harmonious blend of flaky pastry, tangy tomatoes, and fragrant herbs. Ingredients
  

  • all purpose flour
  • salt
  • unsalted butter
  • ice water
  • cream cheese
  • ripe tomatoes
  • basil
  • thyme
  • salt and black pepper
  • olive oil

Instructions
 

  • In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter.Use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled pastry into a circle or rectangle, about 1/8 inch thick.Transfer the pastry to the prepared baking sheet.
  • Spread the softened cream cheese or goat cheese evenly over the pastry, leaving a border around the edges.
  • Arrange the thinly sliced tomatoes over the cheese in a single layer.Sprinkle the fresh basil and thyme leaves over the tomatoes. Season with salt and black pepper.
  • Gently fold the edges of the pastry over the filling, creating a rustic border.Drizzle the tomatoes with a little olive oil.
  • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the tomatoes are tender.
  • Remove the tart from the oven and let it cool slightly.Slice the tart into wedges or squares. Serve warm and enjoy the savory flavors of your Rustic Tomato and Herb Tart.
