Equipment

  • mixing bowl
  • rolling pin
  • dumpling mold
  • wok surface

Ingredients

  • all-purpose flour
  • hot water
  • salt

Instructions

  • In a mixing bowl, combine the all-purpose flour and salt.Gradually add hot water to the flour mixture while stirring with a fork or chopsticks.
  • Once the dough starts to come together, transfer it to a lightly floured work surface.Knead the dough for about 5-7 minutes until it becomes smooth and elastic. If the dough feels sticky, add a little more flour. If it's too dry, add a few drops of hot water.
  • Shape the dough into a ball and cover it with a damp cloth or plastic wrap.Let the dough rest at room temperature for at least 30 minutes. This resting period allows the gluten to relax and the dough to become more pliable.
  • After resting, divide the dough into smaller portions, about the size of a walnut.Roll each portion into a thin, round wrapper, about 3 inches in diameter. If you prefer thicker wrappers, roll them slightly thicker.
  • Place a spoonful of your desired filling in the center of each wrapper.Fold the wrapper in half to create a half-moon shape, then pinch and pleat the edges to seal the dumpling. Alternatively, use a dumpling mold or cutter for uniform shapes.
  • Cook the dumplings immediately by boiling, steaming, or pan-frying according to your recipe.
  • If you prefer to freeze the dumplings for later use, place them on a tray lined with parchment paper and freeze until solid. Transfer the frozen dumplings to a zip-top bag for long-term storage.
