Potato and Bacon Delight is a delightful combination of tender, seasoned potatoes and crispy, smoky bacon. Ingredients
  

  • potatoes
  • bacon
  • onion
  • garlic
  • salt and pepper
  • green onions

Instructions
 

  • In a pot of salted boiling water, parboil the diced potatoes for about 5 minutes. Drain and set aside.
  • In a large skillet over medium heat, cook the chopped bacon until it becomes crispy and browned. Remove the bacon with a slotted spoon and place it on a plate lined with paper towels to drain excess grease. Leave about 2 tablespoons of bacon grease in the skillet.
  • In the same skillet with the remaining bacon grease, sauté the finely chopped onion and minced garlic until they become soft and translucent, about 3-4 minutes.
  • Add the parboiled potatoes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the potatoes are golden brown and crispy on the outside, about 15-20 minutes.
  • Once the potatoes are crispy, add the cooked bacon back to the skillet. Stir to combine and let it cook for another 2-3 minutes to meld the flavors.
  • Remove from heat. Garnish with chopped green onions or parsley if desired. Serve hot as a flavorful side dish or a satisfying main course.
