- 1 lb (450g) boneless chicken, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion , finely chopped
- 2 cloves garlic, minced
- 1 -inch piece of ginger, grated
- 2 tomatoes, finely chopped
- 2 teaspoons curry powder (adjust to your spice preference)
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder (adjust to your spice preference)
- 1 cup coconut milk (or use yogurt or cream for a different variation)
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onions and sauté until they turn translucent.
