Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste

  • 1

cup of your choice of stuffing (e.g., spinach and feta, sun-dried tomatoes and mozzarella, or ham and Swiss cheese)

  • 2 tablespoons olive oil
  • 1 teaspoon tablespoons paprika
  • 1

    teaspoon garlic powder

  • 1 teaspoon dried thyme or your preferred herbs

  • Toothpicks or kitchen twine (for securing the stuffed chicken)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Lay the chicken breasts flat on a clean surface. Use a sharp knife to carefully cut a slit horizontally through the thickest part of each chicken breast, creating a pocket for the stuffing. Be careful not to cut all the way through.
  • Season both the outside and inside of the chicken breasts with salt, pepper, paprika, and dried thyme or your preferred herbs.
  • Fill each chicken breast pocket with your chosen stuffing. You can use about 1/4 cup of stuffing per breast, but adjust as needed to avoid overfilling.
  • Seal the open ends of the chicken breasts with toothpicks or tie them with kitchen twine to keep the stuffing inside.
  • In an ovenproof skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear them for 2-3 minutes on each side until they are nicely browned.
  • If using an ovenproof skillet, you can place it directly in the preheated oven. Otherwise, transfer the seared chicken breasts to a baking dish. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  • Remove the stuffed chicken breasts from the oven and let them rest for a few minutes. This helps the juices redistribute and keeps the chicken moist. Remove toothpicks or twine before serving.
  • Serve your stuffed chicken breasts with your favorite sides, such as roasted vegetables, mashed potatoes, or a salad.
