  • 3-4 cloves of garlic, minced
  • 1 -inch piece of ginger, minced

  • 1 teaspoon garam masala
  • Salt, to taste

  • Fresh cilantro leaves for garnish

Instructions
 

  • In a large, heavy-bottomed pan or a Dutch oven, heat the oil or ghee over medium heat. Add the chopped onions and sauté until they turn golden brown.
  • Add the minced garlic and ginger, and green chilies. Sauté for a few more minutes until the raw smell disappears.
  • Stir in the ground cumin, ground coriander, turmeric powder, and paprika or Kashmiri red chili powder. Cook for a minute or two to bloom the spices.
  • Add the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.
  • Now, add the meat cubes and cook, stirring occasionally, until they are browned on all sides.
  • Reduce the heat to low, add the yogurt, and continue cooking for another 5-7 minutes. This helps tenderize the meat.
  • Pour in enough water to cover the meat, season with salt, and bring the mixture to a boil. Once boiling, reduce the heat, cover, and simmer for about 1-1.5 hours or until the meat is tender and the sauce has thickened.
  • Add the garam masala and simmer for an additional 5 minutes.
