Instructions
- Rinse the dried sugar beans (navy beans) under cold running water and drain them.Place the rinsed beans in a large bowl and cover them with water. Allow them to soak overnight or for at least 8 hours. Drain and rinse the beans before using.
- In a large soup pot, heat the olive oil over medium heat.Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Sauté for about 5-7 minutes until the vegetables become slightly softened.
