Ingredients
  

  • all purpose flour
  • salt
  • unsalted butter
  • cold water
  • olive oil
  • onion
  • garlic
  • frozen peas
  • corn kernels
  • cheddar cheese
  • paprika
  • eggs
  • milk
  • mixed herbs

Instructions
 

  • In a large mixing bowl, combine the all-purpose flour and salt.
    Add the cold, cubed butter to the flour mixture.
    Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse breadcrumbs.
  • Gradually add ice-cold water, a little at a time, and mix until the dough comes together. You may not need all the water.
  • Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 15 minutes while you prepare the filling.
  • Preheat your oven to 350°F (175°C).
    In a large skillet, heat the cooking oil over medium heat.
    Add the finely chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onions become translucent.
  • Add the ground beef or lamb to the skillet and cook until it's browned and cooked through. Break up the meat with a spoon as it cooks.
    Stir in the frozen peas and corn kernels. Cook for an additional 2-3 minutes until the vegetables are heated through.
  • Remove the skillet from the heat and let the meat and vegetable mixture cool slightly.
    Stir in the grated cheddar cheese and season the filling with salt, black pepper, paprika, and dried mixed herbs. Mix well to combine.
  • Roll out the chilled pastry dough on a floured surface to fit a greased pie dish (approximately 9 inches or 23 cm in diameter). Trim any excess dough from the edges.
    Transfer the pastry to the pie dish and press it into the bottom and sides.
  • Spoon the meat and vegetable filling into the pastry crust, spreading it out evenly.
  • In a separate bowl, whisk together the eggs and milk until well combined.
    Pour the egg and milk mixture over the meat and vegetable filling in the pastry crust.
  • Place the filled pie dish in the preheated oven.
    Bake for 45-50 minutes or until the Souttert is set and the top is golden brown.
  • Remove the Souttert from the oven and let it cool for a few minutes before slicing.
    Serve warm or at room temperature as a hearty main course or appetizer.
