- dried split green pea
- water
- ham hock
- onion
- carrot
- celery stalks
- garlic
- bay leaf
- thyme
- salt and black pepper

Instructions
- Rinse the dried split green peas under cold running water and drain them.
- In a large soup pot, heat the olive oil over medium heat.Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Sauté for about 5-7 minutes until the vegetables become slightly softened.
- If using a ham hock or ham bone for added flavor, add it to the pot along with the rinsed split peas.Pour in the 8 cups of water, covering all the ingredients.
- Add the bay leaf, dried thyme, and season with salt and black pepper to taste. Be cautious with the salt, as the ham may add saltiness.Stir the soup well to combine the ingredients
- Bring the mixture to a boil over high heat.Once it boils, reduce the heat to low and let the soup simmer, partially covered, for about 1 to 1.5 hours. Stir occasionally and skim off any foam that forms on the surface.
- If you used a ham hock or ham bone, carefully remove it from the soup and set it aside to cool slightly.Once it's cool enough to handle, shred any meat from the ham hock and return the meat to the soup. Discard the bone and any excess fat.
- Ladle the hot dried pea soup into bowls.If desired, garnish with chopped fresh parsley for a pop of color and added freshness.Serve the soup hot with crusty bread or rolls for a comforting and satisfying meal.
