Ingredients
  

  • beef stew meat
  • olive oil
  • onion
  • carrot
  • celery stalks
  • beef broth
  • tomatoes
  • thyme
  • rosemary
  • salt and pepper
  • cauliflower florets
  • spinach

Instructions
 

  • In a large soup pot, heat the olive oil over medium-high heat. Add the beef stew meat and sear it until it's browned on all sides. Remove the beef from the pot and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.
  • Add the diced carrots, diced celery, and diced bell pepper to the pot. Stir to combine with the aromatics.
  • Pour in the beef broth and add the can of diced tomatoes (unsweetened) to the pot. Stir well to combine.
  • Sprinkle in the dried thyme, dried rosemary, and season with salt and black pepper to taste. Stir the ingredients. Let the soup simmer over low to medium heat for about 30-40 minutes to allow the flavors to meld together.
  • Add the cauliflower florets to the soup and continue to simmer for an additional 10-15 minutes or until the cauliflower is tender. Stir in the chopped spinach or kale and let it wilt into the soup.
  • Return the seared beef to the pot and stir it into the soup. Taste the soup and adjust the seasoning if needed by adding more salt and pepper.
  • Ladle the hot keto soup with beef into bowls. If desired, garnish with chopped fresh parsley for a burst of color and added freshness. Serve the soup hot as a satisfying and low-carb meal that's perfect for those following a ketogenic lifestyle.
