Ingredients

  • all purpose flour
  • white wine
  • chicken broth

Instructions
 

  • In a large, heavy-bottomed pot, melt the unsalted butter over medium heat. Add the thinly sliced onions and minced garlic to the pot. Cook, stirring occasionally, for about 30-40 minutes or until the onions are deeply caramelized and golden brown. You can add a pinch of sugar to aid in the caramelization, if desired.
  • Sprinkle the all-purpose flour over the caramelized onions and stir to combine. Cook for an additional 2-3 minutes to remove the raw flour taste.
  • If using dry white wine, pour it into the pot and stir, scraping up any browned bits from the bottom of the pot. Cook for 2-3 minutes to allow the alcohol to evaporate.
  • Pour in the beef broth and Worcestershire sauce. Stir well to combine. Season the soup with salt and black pepper to taste. Keep in mind that Worcestershire sauce adds saltiness, so be cautious with the additional salt.
  • Reduce the heat to low and let the soup simmer for about 20-30 minutes to allow the flavors to meld together.
  • While the soup simmers, preheat your oven's broiler. Place the slices of baguette or French bread on a baking sheet and toast them under the broiler until they are lightly browned. Keep an eye on them to prevent burning.
  • Ladle the hot French onion soup into ovenproof bowls. Place a toasted slice of bread on top of each bowl of soup. Sprinkle a generous amount of grated Gruyère or Swiss cheese over the bread.
  • Place the bowls under the broiler and broil for about 2-3 minutes or until the cheese is melted and bubbly with golden brown spots.
