Instructions
 

  • Peel and dice the potatoes into 1/2-inch cubes. Chop the onion, mince the garlic, slice the carrots, and slice the celery stalks
  • In a large pot, heat a bit of olive oil or butter over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.
  • Add the diced potatoes, sliced carrots, and sliced celery to the pot. Sprinkle in the dried thyme, salt, and black pepper to taste. Stir well to coat the vegetables with the seasonings.
  • Pour the chicken broth into the pot, covering all the ingredients.
  • Bring the mixture to a boil over medium-high heat. Once it boils, reduce the heat to low, cover the pot with a lid, and let the soup simmer for about 20-25 minutes or until the potatoes are tender.
  • Using an immersion blender, carefully blend the soup until it reaches your desired level of creaminess. You can leave it slightly chunky or blend it until it's completely smooth.
  • Pour in the heavy cream or half-and-half and stir to combine. Taste the soup and adjust the seasoning, if needed, by adding more salt and pepper.
