Ingredients
  

  • Yukon Gold or Russet potatoes
  • cream cheese
  • unsalted butter
  • heavy cream
  • garlic
  • dried thyme
  • salt and black pepper
  • parmesan cheese
  • fresh chives

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish or a similar-sized ovenproof dish.
  • Place the sliced potatoes in a large pot of salted boiling water. Cook the potatoes for about 8-10 minutes or until they are just tender. You should be able to pierce them with a fork without them falling apart. Drain the potatoes and set them aside.
  • In a mixing bowl, combine the softened cream cheese, melted butter, heavy cream, minced garlic, dried thyme, salt, and black pepper. Mix until the ingredients are well combined and the mixture is smooth.
  • Arrange half of the cooked potato slices in the greased baking dish in an even layer. Pour half of the creamy mixture over the potatoes. Repeat with the remaining potatoes and creamy mixture.
  • Sprinkle the grated Parmesan cheese evenly over the top. Cover the baking dish with aluminum foil. Place the dish in the preheated oven and bake for 20 minutes.
  • Remove the foil and continue baking for an additional 10-15 minutes or until the potatoes are tender and the top is golden brown and bubbling.
  • Remove the creamy potatoes with cream cheese from the oven. Garnish with chopped fresh chives or parsley, if desired. Serve the dish hot as a delightful side to your favorite main course.
