  • cup cherry tomatoes
  • orange bell pepper
  • corn kernels
  • cucumber
  • blue berries
  • red cabbage
  • olive oil
  • balsamic vinegar
  • honey
  • dijon Mustad
  • salt and pepper

Instructions
 

  • In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey or maple syrup, and Dijon mustard until well combined.
    Season the dressing with salt and pepper to taste. Set it aside.
  • In a large salad bowl, arrange the colorful ingredients in rainbow order: cherry tomatoes (red), orange bell pepper (orange), corn kernels (yellow), cucumber (green), blueberries (blue), and red cabbage (purple).
  • Just before serving, drizzle the prepared dressing over the rainbow of ingredients.
    Toss the salad gently to coat all the elements with the dressing. Be careful not to overmix to maintain the vibrant colors.
  • Serve your Rainbow Salad immediately as a side dish or a refreshing light meal.
