  • 1 bay leaf

Instructions
 

  • In a large pot, cook the diced bacon over medium heat until it becomes crispy. Remove some of the bacon bits for garnish and leave some in the pot for flavor.
  • Add chopped onions, carrots, and celery to the pot with the bacon. Sauté for about 5 minutes until the vegetables become tender.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the dried green split peas, chicken or vegetable broth, bay leaf, and dried thyme to the pot. Stir well.
  • Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 45 minutes to 1 hour, or until the split peas are tender and the soup has thickened.
  • Remove the bay leaf and discard it. Season the soup with salt and pepper to taste.
