  • 4 slices

    of bacon, chopped

  • 1 small onion, finely chopped

  • 2 cloves

    garlic, minced

  • 2 (15-ounce) cans of white beans (navy beans or cannellini beans), drained and rinsed
  • 4 cups chicken or vegetable broth
  • 1 bay leaf

  • ½ teaspoon

    dried thyme

  • Salt and pepper to taste
  • Optional: Chopped carrots and celery for added flavor and texture

Instructions
 

  • In a large soup pot, cook the chopped bacon over medium heat until it becomes crispy. Remove some of the bacon bits to use as a garnish later, if desired.
  • Add the chopped onion to the pot and sauté it in the bacon fat until it becomes translucent, about 5 minutes. If you're using carrots and celery, add them in now and cook for a few more minutes until they start to soften.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Add the drained and rinsed canned beans to the pot and pour in the chicken or vegetable broth.
  • Add the bay leaf and dried thyme for flavor. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to a simmer. Let it simmer for about 15-20 minutes to allow the flavors to meld together.
  • Remove the bay leaf from the soup and discard it.
  • Use an immersion blender to partially blend the soup, leaving some chunks of beans for texture. Alternatively, transfer a portion of the soup to a blender, blend it, and then return it to the pot.
  • Taste and adjust the seasoning if needed.
