Instructions
 

  • In a large skillet, heat the olive oil over medium heat.
    Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent.
    Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • Add the diced chicken and sliced mushrooms to the skillet. Cook until the chicken is no longer pink and the mushrooms have released their moisture.
    Season with dried Italian seasoning, salt, and pepper. Stir well to incorporate the flavors. Set aside.
  • In a separate saucepan, melt the butter over medium heat.
    Add the all-purpose flour and whisk constantly for about 1-2 minutes to create a roux, a thick paste.
  • Gradually pour in the milk and heavy cream, whisking continuously to avoid lumps. Cook until the sauce thickens and becomes smooth.
    Add the sliced mushrooms to the sauce and simmer for about 5 minutes, allowing the mushrooms to cook and the sauce to absorb their flavors. Season with salt and pepper to taste.
  • Preheat your oven to 350°F (175°C). In a large baking dish, spread a thin layer of the mushroom cream sauce. Place a layer of cooked lasagna noodles over the sauce. Add half of the chicken and mushroom filling on top of the noodles.
  • Sprinkle a portion of shredded mozzarella cheese and grated Parmesan cheese over the filling. Repeat the layers: noodles, the remaining chicken and mushroom filling, and another portion of cheese.
  • Finish with a final layer of lasagna noodles and the remaining mushroom cream sauce. Top the lasagna with the remaining shredded mozzarella cheese and grated Parmesan cheese.
  • Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes or until the top is golden brown, and the lasagna is bubbly and heated through.
