Ingredients
  

  • 1 cup dried brown or green lentils, rinsed and drained

  • 1 pound (450g) of meat (beef, lamb, or sausage), diced or ground

  • 1 onion, finely chopped

  • 2 carrots, peeled and diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced
  • 6 cups vegetable or beef broth

  • 1 can (14 oz) diced tomatoes

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • ½ teaspoon smoked paprika (optional)

  • Salt and pepper to taste
  • Olive oil for cooking

  • Fresh parsley or cilantro for garnish (optional)

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add a bit of olive oil and brown the meat if using diced meat. If using ground meat, cook it until it's no longer pink. Remove the meat from the pot and set it aside.
  • In the same pot, add a bit more oil if needed, and sauté the chopped onions, carrots, and celery until they begin to soften, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  • Stir in the ground cumin, ground coriander, and smoked paprika (if using). Cook for a minute to toast the spices.
  • Add the lentils, diced tomatoes (with their juice), and the cooked meat back into the pot.
  • Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes, or until the lentils are tender. Stir occasionally and add more broth if needed.
  • Season the soup with salt and pepper to taste. Adjust the spices and seasoning as desired.
