Stuffed peppers are a classic dish in which hollowed-out bell peppers are filled with a flavorful mixture of ingredients. The most common filling includes a combination of ground meat (such as beef, pork, or turkey), cooked rice, onions, garlic, herbs, spices, and often tomatoes or tomato sauce. Vegetarian versions replace the meat with ingredients like beans, lentils, or tofu. The stuffed peppers are typically baked until the peppers are tender and the filling is cooked through, creating a harmonious blend of flavors and textures. Stuffed peppers are enjoyed in many cuisines around the world and are known for their comforting and satisfying nature. Ingredients
  

  • 4 large bell peppers, any color

  • 1 pound ground beef (or your choice of ground meat or meatless substitute)

  • 1 cup cooked rice

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup diced tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • 1 cup shredded cheese (such as cheddar or mozzarella)

  • Olive oil for drizzling

  • Fresh parsley or basil for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them thoroughly.
  • In a large skillet, cook the ground beef over medium heat until it's browned. If using meatless substitutes, follow the package instructions.
  • Add the chopped onion and minced garlic to the skillet with the beef. Sauté for a few minutes until the onion is soft and translucent.
  • Stir in the cooked rice, diced tomatoes (with their juice), dried oregano, dried basil, salt, and pepper. Cook for a few more minutes to combine the flavors.
  • Stuff each bell pepper with the meat and rice mixture, pressing it down gently. Place the stuffed peppers in a baking dish.
  • Drizzle a bit of olive oil over the tops of the peppers and cover the dish with aluminum foil.
  • Bake in the preheated oven for about 25-30 minutes or until the peppers are tender.
  • Remove the foil, sprinkle shredded cheese on top of each pepper, and return them to the oven. Bake uncovered for an additional 10-15 minutes or until the cheese is melted and bubbly.
  • Garnish with fresh parsley or basil if desired before serving.

When making stuffed peppers choose peppers that are firm and have a flat bottom. This helps the peppers stand upright in the baking dish, preventing them from toppling over during cooking. Additionally, when you cut the tops off the peppers, try to do it evenly to create a nice opening for stuffing.
