Ingredients
- powdered sugar
- almond flour
- eggs
- granulated sugar
- cream tatar
- gel food coloring
Instructions
- Line two baking sheets with parchment paper or silicone baking mat
- In a large mixing bowl, sift together the powdered sugar and almond flour. Discard any large almond bits that don't pass through the sieve.
- In a separate bowl, using an electric mixer, whisk the egg whites on medium speed until they are frothy. Add a pinch of cream of tartar (if using) to help stabilize the meringue.
- Gradually add the granulated sugar while continuing to beat. Increase the mixer speed to high and whisk until stiff, glossy peaks form. You should be able to hold the bowl upside down without the meringue falling
- Gently fold the sifted dry ingredients into the meringue using a spatula. Be careful not to overmix; you want the batter to be smooth and slightly thick but not runny. If you want to add food coloring, do so at this stage and fold it into the batter until evenly distributed.
- Transfer the macaron batter into a piping bag fitted with a round tip (usually a 1/2-inch or 1 cm tip). Pipe small rounds (about 1 inch in diameter) onto the prepared baking sheets, leaving space between each macaron. They will spread slightly.
- Let the piped macarons sit at room temperature for about 30 minutes to form a skin. This helps them develop their characteristic "feet" during baking.Preheat your oven to 300°F (150°C).
- Bake the macarons in the preheated oven for about 15-18 minutes, rotating the pans halfway through the baking time. The macarons should be set and have developed a slight crust but should not brown.
- Remove the macarons from the oven and let them cool on the baking sheets for a few minutes. Carefully peel them off the parchment paper or baking mat and transfer them to a wire rack to cool completely.
- Once cooled, pair up the macaron shells by size and spread your desired filling on one shell, then sandwich it with another.
- Serve your homemade macarons and enjoy!
