Ingredients
  

  • quinoa
  • water
  • salt
  • olive oil
  • fresh lemon
  • garlic
  • honey
  • maple syrup
  • salt and pepper
  • cherry tomatoes
  • cucumber
  • red bell pepper
  • red onion
  • fresh parsley

Instructions
 

  • In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Add 1/2 teaspoon of salt. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
  • Remove the saucepan from the heat and let it sit, covered, for 5 minutes. Then, fluff the quinoa with a fork and let it cool to room temperature.
  • In a small bowl, whisk together the olive oil, fresh lemon juice, minced garlic, honey or maple syrup, and a pinch of salt and pepper. Adjust the seasonings to taste.
  • In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, diced cucumber, diced red bell pepper, chopped red onion, and fresh parsley. If you're not following a vegan diet, you can also add crumbled feta cheese at this stage.
  • Pour the lemon garlic dressing over the quinoa and vegetables. Toss everything together until the salad is well coated with the dressing.
  • Refrigerate the quinoa salad for at least 30 minutes before serving. This allows the flavors to meld together.
  • Serve the chilled Lemon Garlic Quinoa Salad as a refreshing side dish or enjoy it as a satisfying main course. You can also garnish it with additional fresh parsley or lemon zest if desired.
