Ingredients
  

  • butter
  • onion
  • garlic
  • potatoes
  • broccoli florets
  • vegetable broth
  • milk
  • salt and pepper
  • nutmeg
  • cheddar cheese
  • croutons
  • chives

Instructions
 

  • In a large pot, melt the butter or heat the olive oil over medium heat. Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.
  • Add the diced potato and broccoli florets to the pot. Stir everything together. Pour in the vegetable or chicken broth. Bring the mixture to a boil.
  • Reduce the heat to a simmer, cover the pot, and let it cook for about 15-20 minutes or until the vegetables are tender.
  • Use an immersion blender directly in the pot or carefully transfer the soup to a blender (in batches if necessary). Blend until smooth and creamy. Return the blended soup to the pot if you used a blender.
  • If you prefer a creamier soup, add the milk or cream to the pot. Stir well. Season the soup with salt, pepper, and a pinch of nutmeg if desired. Adjust the seasonings to taste.
  • Reheat the soup gently if needed. Ladle it into bowls. Garnish with grated cheddar cheese, croutons, or chopped chives if desired.
  • Serve your creamy broccoli soup hot, alongside crusty bread or a simple salad for a wholesome and satisfying meal.
