Ingredients
  

  • cake flour
  • granulated sugar
  • baking powder
  • eggs
  • vegetable oil
  • vanilla extract
  • cream of tatar
  • salt
  • water

Instructions
 

  • Preheat your oven to 325°F (160°C). Ensure the oven rack is placed in the lower third of the oven.
  • In a large mixing bowl, sift together the cake flour, 1 1/4 cups of granulated sugar, baking powder, and salt. Set aside.
  • In a separate bowl, whisk together the egg yolks, vegetable oil, water, and vanilla extract until well combined. Gradually add the wet mixture to the dry ingredients and mix until smooth.
  • In another clean, dry bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating. Gradually add the remaining 1/4 cup of granulated sugar, a tablespoon at a time, while continuing to beat. Beat until stiff peaks form.
  • Gently fold the beaten egg whites into the batter in three separate additions until no streaks remain. Be careful not to deflate the egg whites.
  • Pour the batter into an ungreased 10-inch (25 cm) chiffon cake pan. Use a spatula to smooth the top.
  • Bake in the preheated oven for 45-50 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  • Immediately invert the cake pan onto a cooling rack. Allow the cake to cool completely while inverted. This helps prevent the cake from collapsing.
