Instructions
- Preheat your oven to 325°F (160°C). Ensure the oven rack is placed in the lower third of the oven.
- In a large mixing bowl, sift together the cake flour, 1 1/4 cups of granulated sugar, baking powder, and salt. Set aside.
- In a separate bowl, whisk together the egg yolks, vegetable oil, water, and vanilla extract until well combined. Gradually add the wet mixture to the dry ingredients and mix until smooth.
- In another clean, dry bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating. Gradually add the remaining 1/4 cup of granulated sugar, a tablespoon at a time, while continuing to beat. Beat until stiff peaks form.

- Immediately invert the cake pan onto a cooling rack. Allow the cake to cool completely while inverted. This helps prevent the cake from collapsing.
