Instructions
- In a mixing bowl, whisk together the soy sauce, maple syrup, rice vinegar, garlic powder, onion powder, and smoked paprika (if using).
- Add the cubed tempeh to the marinade and toss to coat. Let it marinate for at least 10 minutes, allowing the flavors to infuse.
- In a separate bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, maple syrup, cornstarch, and water. Set the sauce aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tempeh cubes and stir-fry for about 5-7 minutes, or until they become golden brown and slightly crispy. Remove the tempeh from the skillet and set it aside.
- In the same skillet, add another 2 tablespoons of vegetable oil. Add the sliced red and yellow bell peppers, julienned carrot, broccoli florets, and snap peas. Stir-fry the vegetables for about 4-5 minutes, or until they become tender yet still crisp.
- Return the cooked tempeh to the skillet with the stir-fried vegetables.Pour the stir-fry sauce over the tempeh and vegetables. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes, or until the sauce thickens and coats the ingredients.
