Ingredients
  

  • 1 pound (450g) boneless, skinless chicken breasts or thighs, cut into thin strips

  • ¼ cup coconut milk

  • 2 tablespoons soy sauce

  • 2 tablespoons brown sugar

  • 2 cloves garlic, minced

  • 1 tablespoon grated fresh gingertablespoon grated fresh ginger
  • 1 tablespoon

    lemongrass paste (or finely chopped lemongrass)

  • 1 tablespoon

    curry powder

  • Wooden skewers, soaked in water for 30 minutes (to prevent burning)

For the Peanut Sauce:

  • ½ cup creamy peanut butter

  • ¼ cup coconut milk

  • 2 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 1 tablespoon lime juice

  • 1 clove garlic, minced

  • 1/2 teaspoon red pepper flakes (adjust to taste)

Instructions
 

  • In a bowl, whisk together the coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lemongrass paste, and curry powder to make the marinade.
  • Thread the chicken strips onto the soaked skewers and place them in a shallow dish. Pour the marinade over the chicken skewers, making sure they are well coated. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  • While the chicken is marinating, prepare the peanut sauce. In a saucepan over low heat, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and red pepper flakes. Stir until the sauce is smooth and heated through. If it's too thick, you can add a little water to reach your desired consistency.
  • Preheat your grill or grill pan over medium-high heat. Grill the chicken skewers for about 3-4 minutes per side, or until they are cooked through and have grill marks.
  • Serve the chicken satay with the peanut sauce for dipping. You can garnish with chopped peanuts, cilantro, and lime wedges for extra flavor.
