Instructions

- In a heavy-bottomed saucepan, combine the granulated sugar and light corn syrup. Stir them together until the sugar is evenly moistened.
- Place the saucepan over medium-high heat and bring the sugar mixture to a boil. Insert a candy thermometer into the mixture, and continue boiling until it reaches 300°F (149°C). This stage is known as the hard crack stage.
- Remove the saucepan from the heat, and quickly stir in the baking soda and vinegar. Be prepared for the mixture to bubble up and increase in volume.
- Immediately pour the foaming mixture onto the prepared baking sheet. Do not spread it out; let it spread naturally to maintain its bubbly texture.
- Allow the honeycomb candy to cool and harden for about 1 hour at room temperature. It will become brittle and easily shatter into pieces.
- Once completely cooled, use your hands or a blunt object to break the honeycomb candy into bite-sized chunks or irregular pieces.
- Store the honeycomb candy in an airtight container at room temperature. It can be enjoyed on its own, dipped in chocolate, or used as a topping for desserts.
