This easy meatloaf recipe combines ground beef, breadcrumbs, onions, and seasonings, topped with a tangy ketchup-based glaze. The result is a moist and flavorful meatloaf with a crispy exterior. It's an ideal dish for a cozy home-cooked meal.

Ingredients
  

  • 1 1/2 pounds ground beef
  • bread crumbs
  • milk
  • onion
  • bell pepper
  • celery
  • egg
  • salt
  • black pepper
  • garlic
  • thyme

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, diced onion (and any optional vegetables), beaten egg, salt, black pepper, garlic powder, and dried thyme if using. Mix until all the ingredients are well combined. You can use your hands or a spoon to mix.
  • Transfer the meatloaf mixture to a greased baking dish or loaf pan. Shape it into a loaf shape, ensuring it's evenly packed and smooth on top.
  • In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce until well combined.
  • Spread the glaze evenly over the top of the meatloaf.
  • Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until it's cooked through and the top is nicely browned. You can check for doneness by using a meat thermometer; the internal temperature should reach 160°F (71°C).
  • Remove the meatloaf from the oven and let it rest for about 5-10 minutes before slicing. This allows the juices to redistribute and makes slicing easier.
  • Slice the meatloaf into thick slices and serve. You can enjoy it with mashed potatoes, green beans, or your favorite side dishes.
