Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs, milk or cream, salt, and black pepper until well combined. Set aside.
- Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and bell pepper (and diced cooked potatoes and ham or bacon if using) to the skillet.Sauté the vegetables until they are softened and slightly caramelized, about 5-7 minutes.
- Pour the whisked egg mixture into the skillet with the sautéed vegetables. Sprinkle the shredded cheese evenly over the eggs.
- Cook the frittata on the stovetop, without stirring, for about 5 minutes or until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is set in the center and slightly puffed. You can check for doneness by inserting a knife or toothpick into the center; it should come out clean.
- If you want to brown the top of the frittata, you can place it under the broiler for 1-2 minutes until it's golden brown. Be sure to keep an eye on it to prevent burning.
