Chicken skewers recipe

Chicken skewers, often referred to as "chicken kebabs," are a popular dish made by threading pieces of marinated chicken onto skewers and grilling or roasting them until they are cooked to perfection. The chicken is typically cut into small, bite-sized pieces, ensuring quick and even cooking. Chicken skewers can be prepared with various flavor profiles, as they are often marinated in a mixture of spices, herbs, oils, and acids like lemon juice or vinegar. The skewers may also include vegetables like bell peppers, onions, or mushrooms for added flavor and color. Once cooked, chicken skewers are known for their tender, juicy texture and the delicious charred and smoky notes imparted by the grill or oven. They are a favorite for barbecues, picnics, and as a main course for family dinners.

Ingredients

  • 1.5 lbs (about 680g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

  • 1/4 cup olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon cayenne pepper (adjust to taste for spiciness)

  • 1 tablespoon lemon juice

  • Salt and black pepper to taste

  • Wooden skewers, soaked in water for 30 minutes to prevent burning (or use metal skewers)

  • Optional: Bell peppers, onions, and cherry tomatoes for skewering

Instructions

  • In a bowl, combine the olive oil, minced garlic, paprika, ground cumin, ground coriander, cayenne pepper, lemon juice, salt, and black pepper. This mixture will be your marinade.
  • Place the chicken pieces in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken and toss to ensure all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to marinate. You can marinate longer for even more flavor, even overnight.
  • If using wooden skewers, be sure to soak them in water for about 30 minutes before using to prevent them from burning on the grill.
  • Preheat your grill to medium-high heat or preheat your oven to 450°F (230°C) if you prefer to roast the skewers.
  • Thread the marinated chicken pieces onto the skewers, alternating with optional bell peppers, onions, and cherry tomatoes.
  • If grilling, oil the grill grates to prevent sticking. Grill the chicken skewers for about 5-7 minutes per side, or until the chicken is cooked through and has grill marks.
  • If roasting in the oven, place the skewers on a baking sheet lined with parchment paper and roast for about 15-20 minutes, turning them once halfway through until the chicken is cooked through and slightly charred.
  • Once cooked, remove the skewers from the grill or oven and let them rest for a few minutes.
  • Serve your delicious chicken skewers with your favorite side dishes or sauces. They go well with rice, couscous, pita bread, or a fresh salad.
Enjoy your homemade chicken skewers with friends and family for a delightful and flavorful meal!

Notes

One important thing to note when making chicken skewers is to ensure that the chicken pieces are evenly sized. This helps ensure that all the pieces cook at the same rate, preventing some from becoming overcooked and dry while others remain undercooked. Uniformly sized chicken pieces also make it easier to thread onto the skewers, promoting even cooking and a better presentation. So, when cutting the chicken into pieces, take care to make them as consistent in size as possible for the best results.
