Deep Fried Potato Balls with Cheese

Ingredients
- 4 large potatoes, peeled and cubed
- 1 cup grated cheddar cheese
- 1/2 cup grated mozzarella cheese
- 1/4 cup finely chopped green onions
- 2 cloves garlic, minced
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- Place the cubed potatoes in a large pot of salted boiling water. Boil until tender, about 15 minutes.
- Drain and mash them until smooth. In a mixing bowl, combine the grated cheddar cheese, mozzarella cheese, green onions, minced garlic, salt, and black pepper.
- Take a small amount of mashed potatoes and flatten it in your hand. Place a spoonful of the cheese mixture in the center and encase it with the mashed potatoes, forming a ball.
- Ensure there are no gaps. Roll each potato ball in flour, dip it in beaten eggs, and then coat it with breadcrumbs.
- Place them on a baking sheet lined with parchment paper. In a deep fryer or heavy-bottomed pan, heat vegetable oil to 350°F (180°C).
- Carefully place a few potato balls in the hot oil and fry until they are golden brown and crispy, about 3-4 minutes.
- Be cautious not to overcrowd the pan.
- Use a slotted spoon to remove the fried potato balls and place them on paper towels to drain excess oil.
