Ingredients
  

  • 20 chicken drumettes
  • 3 tablespoons soy sauce
  • 2 tablespoons red chili paste
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon black pepper powder
  • 1/2 teaspoon salt (adjust to taste)
  • 2 tablespoons cornstarch
  • 2 tablespoons all-purpose flour
  • 1 egg
  • Chopped cilantro and sliced green onions for garnish
  • Oil for deep frying

Instructions
 

  • Start by preparing the chicken drumettes. Carefully push the meat down to expose the bone and create a lollipop shape. Trim any excess skin or fat.
  • In a mixing bowl, combine soy sauce, red chili paste, ginger-garlic paste, black pepper powder, and salt. Mix well to form a marinade.
  • Marinate the chicken drumettes in the mixture for at least 30 minutes in the refrigerator.
  • In another bowl, whisk together cornstarch, all-purpose flour, and the egg to make a thick batter. Adjust the consistency with a little water if needed.
  • Heat oil in a deep fryer or a heavy-bottomed pan to 350°F (175°C).
  • Dip each marinated chicken drumette into the batter, ensuring it's evenly coated.
  • Carefully place the coated chicken lollipops into the hot oil and fry until they turn golden brown and crispy, about 5-7 minutes. Fry in batches to avoid overcrowding the pan.
  • Use tongs to remove the fried chicken lollipops and place them on a plate lined with paper towels to drain excess oil.
  • Garnish with chopped cilantro and sliced green onions.
  • Serve hot with your favorite dipping sauce.
