  • 2 teaspoons active dry yeast

  • 2 teaspoons sugar

  • 1/4 cup extra-virgin olive oil (plus extra for drizzling)

  • 1 1/2 teaspoons salt

  • Coarse sea salt for sprinkling

  • Fresh rosemary or other herbs (optional for topping)

Instructions
 

  • In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  • In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture and olive oil to the dry ingredients.
  • Mix until a dough forms, then knead the dough on a lightly floured surface for about 5-10 minutes until it becomes smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm, draft-free place for about 1-2 hours, or until it has doubled in size.
  • Preheat your oven to 425°F (220°C).
  • Punch down the risen dough and transfer it to a lightly greased baking sheet or a rectangular baking dish. Press the dough out to fit the shape of the pan.
  • Use your fingertips to create dimples in the dough's surface. Drizzle generously with olive oil, and sprinkle coarse sea salt over the top. Add fresh rosemary or other herbs if desired.
  • Bake in the preheated oven for 20-25 minutes or until the focaccia is golden brown on top and sounds hollow when tapped on the bottom.
  • emove from the oven and let it cool slightly before slicing and serving.
