  • In a bowl, sift together the flour, baking powder, and a pinch of salt. Sifting helps make the cake lighter and prevents lumps.
  • In a separate large bowl, beat the eggs and sugar together with an electric mixer on high speed until the mixture becomes pale, thick, and doubled in volume. This may take about 5-7 minutes.
  • Gently fold in the vanilla extract into the egg mixture.
