Instructions
- Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- In a mixing bowl, whisk together the almond flour, coconut flour, ground flaxseed meal, baking powder, salt, and xanthan gum (if using). Make sure they are well combined.
- In another bowl, beat the eggs. Add the melted and cooled unsalted butter, Greek yogurt (or sour cream), and water. Mix until everything is well combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until you have a thick and cohesive dough. The mixture should come together easily and not be overly wet.
- Transfer the dough to the prepared loaf pan. Use a spatula or your hands to spread it out evenly and smooth the top.
- Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
- Allow the low-carb bread to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Once cooled, slice it into 12 equal pieces.
- Serve your homemade low-carb bread as desired. It's great for sandwiches, toast, or as a side with your favorite low-carb dishes.
