Ingredients
  

  • 2 cups fresh broccoli florets
  • 1/2 cup whole almonds blanched and peeled
  • 1 small onion finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • In a large soup pot, heat the olive oil over medium heat.
  • Add the chopped onion and garlic, and sauté until they become translucent, about 3-4 minutes.
  • Add the broccoli florets and blanched almonds to the pot.
  • Continue to cook for another 3-4 minutes, stirring occasionally. Pour in the vegetable broth, and bring the mixture to a boil.
  • Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the broccoli is tender
  • Using a blender or an immersion blender, carefully puree the soup until smooth and creamy.
  • Be cautious when blending hot liquids to avoid splattering. Return the soup to the pot over low heat.
  • Stir in the heavy cream and heat the soup through, but do not let it boil.
  • Season with salt and pepper to taste.
  • Ladle the creamy broccoli almond soup into bowls.
  • Garnish with fresh parsley and a few toasted almond slivers if desired. Serve hot and enjoy!
