- boneless chicken

Instructions
- Place each chicken breast (or thigh) between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound them to an even thickness of about 1/4 inch. Season both sides with salt and black pepper.
- In three separate shallow bowls or plates, set up a dredging station:Bowl 1: All-purpose flourBowl 2: Whisked eggsBowl 3: Breadcrumbs (and optionally, grated Parmesan cheese and paprika, for extra flavor)
- Coat each piece of chicken first in the flour, shaking off any excess. Dip it into the whisked eggs, ensuring it's well-coated.
- Finally, press it into the breadcrumbs mixture, making sure the breadcrumbs adhere evenly to both sides.
- In a large frying pan or skillet, heat enough vegetable oil to cover the bottom of the pan over medium-high heat. The oil should be hot but not smoking. To test the oil, you can drop a small piece of breadcrumb into it; it should sizzle immediately.
- Carefully place the breaded chicken pieces into the hot oil, working in batches if necessary to avoid overcrowding the pan.
- Fry for about 3-4 minutes per side, or until the schnitzel is golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
- Use tongs to transfer the fried chicken schnitzel to a plate lined with paper towels to drain any excess oil.
- Serve the Chicken Schnitzel immediately while it's still hot, garnished with lemon wedges if desired.
