Rainbow Roll Sushi

Equipment

  • Bamboo sushi rolling mat (makisu)
  • Plastic wrap or a Ziploc bag (for covering the rolling mat)
  • sharp knife
  • cutting board
  • Bowl of water (for moistening hands)

Ingredients
  

  • 1 batch of prepared sushi rice
  • (2 cups of cooked rice seasoned with rice vinegar, sugar, and salt)
  • 4 sheets of nori (seaweed)
  • 1 avocado, thinly sliced
  • 1/2 cucumber, thinly sliced into matchsticks
  • 4 imitation crab sticks, halved lengthwise
  • 4-6 slices of fresh tuna
  • 4-6 slices of fresh salmon
  • 4-6 slices of fresh yellowtail Tobiko (fish roe) for garnish (optional)
  • Soy sauce for dipping
  • Pickled ginger and wasabi for serving

Instructions
 

Prepare the Sushi Rice:

  • Cook sushi rice according to the package instructions. While the rice is still warm, season it with a mixture of rice vinegar, sugar, and salt.
  • Allow it to cool to room temperature.

Prepare the Ingredients:

  • Slice the avocado, cucumber, tuna, salmon, and yellowtail into thin, even strips. Cover your bamboo sushi rolling mat with plastic wrap or place it inside a Ziploc bag to prevent sticking.

Assemble the Rainbow Roll

  • Lay a sheet of plastic wrap on top of the bamboo mat. Place a sheet of nori, shiny side down, onto the plastic wrap-covered mat.
  • Wet your hands to prevent the rice from sticking and spread a thin layer of sushi rice evenly over the nori, leaving about half an inch of nori at the top uncovered.

Add the Fillings:

  • Place a few slices of avocado, cucumber, and imitation crab sticks in a horizontal line across the center of the rice-covered nori.

Roll the Sushi

  • Using the bamboo mat, carefully lift and roll the nori, rice, and fillings into a tight cylinder, applying gentle pressure as you roll. Once rolled, remove the plastic wrap from the outside of the sushi roll.

Add the Rainbow Toppings:

  • Lay a slice of tuna, salmon, and yellowtail on top of the sushi roll, covering the entire length. If using, sprinkle tobiko (fish roe) over the fish.

Slice and Serve:

  • Using a sharp, wet knife, slice the Rainbow Roll into bite-sized pieces. Wipe the knife clean between cuts for neat slices. Arrange the sushi pieces on a plate and serve with soy sauce, pickled ginger, and wasabi.
